Steps

  1. For the tin coating, mix 1 tbsp of wheat flour, 1 tbsp of margarine, and 1 tbsp of cooking oil until evenly combined.
  2. Brush a 24 cm diameter tin thinly with the coating.
  3. Prepare a bowl and add 250 gr of margarine and 100 gr of butter.
  4. Add 200 gr of icing sugar.
  5. Mix on low speed at first so the icing sugar does not fly about.
  6. Once it starts to come together, turn the speed up to maximum and beat for about 8 minutes until the mixture is fluffy and pale.
  7. Add 1 tsp of vanilla and 2 tbsp of sweetened condensed milk.
  8. Add 10 egg yolks one at a time, mixing on the lowest speed for about 20 seconds per yolk until evenly combined.
  9. Add 250 gr of low-protein wheat flour and 20 gr of milk powder, sifting them to make sure there are no lumps.
  10. Fold the batter briefly first so the flour does not fly about when you mix it.
  11. Turn the mixer on at the lowest speed and mix until evenly combined, or fold it in with a spatula.
  12. Continue folding with a spatula to make sure the flour is fully incorporated, then set it aside.
  13. Prepare a bowl and add 5 egg whites and 1/2 tsp of salt.
  14. Beat at maximum speed until soft peaks form.
  15. Once the whites start to foam, add 50 gr of granulated sugar gradually in three additions.
  16. Add 1 tbsp of lime juice.
  17. Once the whites are creamy, fine textured, and hold a hook when lifted, stop the mixer and do not overmix.
  18. Add the egg white mixture into the yolk batter gradually.
  19. Fold gently from the bottom up so the batter stays thick.
  20. Set aside one third of the batter, about 400 grams.
  21. Mix 1 tbsp of cocoa powder with 1 tsp of chocolate paste, then combine it with a little of the 400 gram portion and stir until evenly combined.
  22. Add that chocolate mixture into the 400 gram portion and stir until evenly combined.
  23. Pour the batters into the tin alternately, in turns.
  24. Tap the tin a few times so trapped air can escape, then use the leftover chocolate batter to make a pattern on top.
  25. Preheat the oven for about 10 minutes.
  26. Bake at 170 degrees Celsius with top and bottom heat for about 50 minutes or until the cake is done.
  27. After about 50 minutes, when the surface is browned, do a skewer test; if no batter sticks to it, the cake is done.
  28. Take the tin out of the oven.
  29. Slice the cake and it is ready to serve.
