Ingredients

Steps

  1. Grease a 24 cm round tin with a thin layer of margarine.
  2. Dust the tin thinly with wheat flour until the whole surface is coated, tip out the excess flour, then set it aside.
  3. Put the sugar, margarine, and emulsifier into a bowl.
  4. Beat on maximum speed for about five minutes until the margarine is fluffy and the sugar has dissolved.
  5. Add the eggs one at a time, beating for about one minute after each on maximum speed until all the eggs are in.
  6. Add the vanilla, then beat again for about two minutes until evenly combined.
  7. Add the baking powder, milk powder, and wheat flour, sifting them in so there are no lumps.
  8. Beat on the lowest speed or fold with a spatula until the batter is thoroughly combined.
  9. Pour in the liquid milk, then fold from the bottom up until no liquid is left settling at the bottom.
  10. Take one third of the batter, mix in the cocoa powder, then stir until evenly combined.
  11. Pour the plain batter into the tin.
  12. Pour in the chocolate batter in alternating layers then cover it again with plain batter, repeating until all the batter is in; keep a little chocolate batter back for the top.
  13. Make a pattern through the batter using a satay skewer or a fork.
  14. Pour the remaining chocolate batter over the surface, then make a pattern in the surface only.
  15. Tap the tin several times so the trapped air can escape.
  16. Bake on the lowest rack of a preheated oven at 170 degrees Celsius with top and bottom heat for about 50 minutes, until a skewer comes out clean.
  17. Let the cake cool completely, turn it out of the tin, then slice as you like.
