Ingredients

Steps

  1. Put 250 g powdered sugar, 200 g margarine, and 130 g butter into a bowl.
  2. Beat at low speed until combined, then raise to maximum speed, about 5 minutes in total, until the mixture is fluffy and pale.
  3. Add 8 egg yolks one at a time, beating for about 1 minute after each addition, until all the yolks are in and the batter is ribbon-forming.
  4. Add 1 tsp vanilla, then beat for about 1 more minute until evenly combined.
  5. Add 200 g wheat flour and 50 g milk powder in stages while stirring until evenly combined, then set aside.
  6. In another bowl, put 7 egg whites and 1 tbsp lemon juice, then beat for about 5 minutes until risen and stiff.
  7. Add 1 tbsp pandan paste, then stir until evenly combined.
  8. Add the egg white mixture into the yolk batter a little at a time while folding until evenly combined.
  9. Take one third of the batter, add 2 tbsp cocoa powder, then stir until evenly combined.
  10. Grease a 24 cm flower-shaped pan thinly with margarine, then dust it lightly with flour.
  11. Pour the pandan batter and the chocolate batter into the pan in alternating layers.
  12. Make a marble pattern on the surface using a skewer or a fork.
  13. Tap the pan a few times so the air trapped in the batter can escape.
  14. Bake in the preheated oven at 170 degrees Celsius with top and bottom heat for about 55 minutes until cooked and golden.
  15. Take the pan out of the oven, turn the cake out, then let it cool to warm before slicing.
