Ingredients

Steps

  1. Mix 1 tablespoon wheat flour, 2 tablespoons cooking oil, and 1 tablespoon margarine for the pan grease, then brush a 24 cm round tin with it.
  2. Beat 300 g margarine with 200 g powdered sugar and 1 teaspoon vanilla powder, starting on low speed then continuing at maximum for about 8 minutes until fluffy and pale.
  3. Add 9 egg yolks one at a time, beating at medium speed for about 30 seconds after each until incorporated.
  4. Add 2 tablespoons of sweetened condensed milk, beat until combined, then transfer the batter to another bowl.
  5. In the washed and dried mixer bowl, whip 6 egg whites at maximum speed for about 5 minutes to soft peaks, adding 100 g granulated sugar in three additions.
  6. Add the whipped whites to the yolk batter in stages, then fold gently from the bottom up until evenly combined.
  7. Divide the batter into two equal portions, ideally weighing them so they match.
  8. Into one portion, sift 75 g wheat flour and 75 g black glutinous rice flour, then fold gently until combined.
  9. Add black food colouring as needed, fold again until even, then set aside.
  10. Into the other portion, sift 125 g wheat flour and 25 g milk powder, then fold until combined.
  11. Add 1 teaspoon of pandan paste, then fold again until evenly coloured.
  12. Pour the two batters into the tin in alternating layers.
  13. Tap the tin a few times, then swirl a skewer through the top only to make the marble pattern.
  14. Sit the tin on a second tin so the heat does not hit it directly, then bake at 180 degrees Celsius with top and bottom heat for 10 minutes.
  15. Lower the oven to 125 degrees Celsius, then bake for another 10 minutes.
  16. Lower the oven to 100 degrees Celsius, then bake for a further 30 minutes until a skewer comes out clean.
  17. Carefully turn the cake out of the tin while it is still hot, let it cool, then slice and serve.
