Open offline saves

Ingredients

Sweet Potato Ball ingredients:

Palm sugar syrup:

Coconut Sauce:

Steps

  1. Prepare 500 gr of orange sweet potato, peel it, wash it clean, then cut it into small pieces so it softens faster when steamed.
  2. Heat the steamer until the water boils, add the cut sweet potato, then steam for about 15 minutes or until it is soft.
  3. After about 15 minutes, test a piece; if it is soft, lift it out of the steamer.
  4. While it is still hot, mash the sweet potato with a chopper or a mortar lined with plastic.
  5. Transfer the mashed sweet potato into another bowl.
  6. Add 100 gr of tapioca flour and 1/4 tsp of salt.
  7. Stir until evenly combined, then knead by hand until the dough holds together and can be shaped, adding a little more flour if it is still too soft.
  8. Take a little dough and roll it into a ball or an oval, whichever you prefer.
  9. Repeat until all the dough has been rolled.
  10. Turn on medium heat and bring 1 litre of water to a boil in a pot.
  11. Once the water boils, add the sweet potato balls and cook until they all float.
  12. Once they have all floated up, cut one open to test; if it is soft they are done, then turn off the heat.
  13. Strain the sweet potato balls from the water and set them aside.
  14. Prepare a pot and add 600 ml of water, 200 gr of palm sugar cut into small pieces, 1/2 tsp of salt, and 2 pandan leaves.
  15. Turn on medium heat and cook until the water boils and the sugar dissolves.
  16. Once it boils and the sugar has dissolved, turn off the heat, then strain the palm sugar syrup to separate it from the dregs.
  17. Dissolve 2 tbsp of tapioca flour in 50 ml of water until evenly combined.
  18. Add the tapioca slurry into the palm sugar syrup a little at a time while stirring so it does not clump.
  19. Turn on medium heat and cook until it boils and thickens, stirring constantly so the bottom does not scorch or clump.
  20. Once it boils, thickens, and bubbles up so the colour is darker and glossier, add the sweet potato balls you set aside.
  21. Cook a little longer until the syrup boils and bubbles again, then turn off the heat.
  22. For the coconut sauce, prepare a pot and add 300 ml of thick coconut milk, 1/2 tsp of salt, and 1 pandan leaf.
  23. Turn on medium heat and cook until it boils, stirring constantly so the coconut milk does not split.
  24. Once it boils and bubbles up, turn off the heat.
  25. Serve the sweet potato balls with the coconut sauce.
