Ingredients

Steps

  1. Line a 20x20 cm tin with aluminium foil so water cannot seep in at the corners, then line it with baking paper.
  2. Put 5 egg yolks and 1 whole egg into a bowl, then add 80 ml instant coconut cream.
  3. Add 40 ml cooking oil, 1/2 tsp vanilla, 1 tsp pandan paste, and 85 g wheat flour.
  4. Stir until evenly combined and smooth, strain it if any lumps remain, then set aside.
  5. In another bowl, put 5 egg whites, 1/4 tsp salt, and 1 tsp lemon juice.
  6. Beat at maximum speed until the whites begin to foam.
  7. Add 100 g granulated sugar gradually in three additions while continuing to beat.
  8. Keep beating for about 3 minutes to soft peaks, taking care not to overmix so the texture stays fine.
  9. Add the egg whites to the yolk batter a little at a time, then fold gently from the bottom up until no liquid is left settled at the bottom.
  10. Pour the batter into the tin, then level it with a spatula or a spoon.
  11. Tap the tin a few times to release the trapped air, then set it inside a larger tin, as it will be baked in a water bath.
  12. Preheat the oven for about 10 minutes, put the tin on the bottom rack, then pour hot water into the larger tin to a depth of about 1 cm.
  13. Bake at 180 degrees Celsius with top and bottom heat for about 50 minutes until done.
  14. After about 35 minutes, once the top is firm and golden, carry on baking with bottom heat only until cooked through.
  15. Do a skewer test, then take the tin out of the oven and turn the cake out.
  16. Peel the baking paper off slowly, let the cake cool, then slice and serve.
