Steps

  1. Put 50 g cornstarch, 100 g granulated sugar, 500 ml liquid milk, and 1/4 tsp salt into a saucepan, then stir until evenly combined.
  2. Add 2 egg yolks and 1/2 tsp vanilla, then stir again until evenly combined.
  3. Cook over medium heat, stirring constantly, until it boils, thickens, and bubbles up, then turn off the heat.
  4. Add 30 g margarine, then stir until the margarine melts and is evenly combined.
  5. While still hot, transfer the custard to a container, press plastic wrap onto the surface so it does not form a skin, then let it cool.
  6. Bring water to the boil in a pan, set a bowl with 100 g dark cooking chocolate over it, pour in 80 ml liquid whipping cream, and melt until the chocolate is smooth and combined, then set aside.
  7. Put 125 g margarine, 1 tbsp granulated sugar, 1/2 tsp salt, and 200 ml water into a saucepan, then cook until the water boils and the margarine melts.
  8. Turn off the heat, add 150 g wheat flour, then stir until evenly combined and the dough comes together.
  9. Turn the heat back on at the lowest setting and stir the dough for about 1 minute.
  10. Transfer the dough to another bowl, spread it out, then let it rest 10 to 15 minutes until cool.
  11. Add 3 eggs one at a time while mixing on low speed until the batter is evenly combined, thicker, and feels heavy.
  12. Transfer the batter into a piping bag fitted with a nozzle.
  13. Pipe long strips onto a tray greased with margarine, then wet the ends of each strip with a little water.
  14. Preheat the oven for about 10 minutes, then bake for about 25 minutes until the pastries are done and golden brown.
  15. Take the tray out of the oven and let the pastries cool completely.
  16. Put the custard into a piping bag, make a hole in the bottom of each pastry, then pipe in as much custard as you like.
  17. Dip the top of each pastry into the chocolate, then drain them on a cooling rack and add toppings to taste.
