Ingredients

Steps

  1. Melt 140 g milk chocolate and 60 g dark chocolate over a pan of boiling water on low heat, stirring until liquid, then lift it off.
  2. Heat 200 ml whipping cream over low heat until warm with small bubbles at the edges, without letting it boil.
  3. Pour the warm cream into the melted chocolate and stir until fully combined.
  4. Cover the ganache with plastic wrap pressed onto the surface, then chill it overnight.
  5. For the whipped caramel, put 120 g granulated sugar into a pan and spread it out evenly.
  6. Heat over medium heat without stirring, just swirling the pan slowly until the sugar melts and turns a lovely colour.
  7. While waiting, warm 120 ml liquid whipping cream.
  8. Pour the warm cream into the caramel a little at a time with the heat turned down, stirring constantly.
  9. Add 30 g butter and a little salt, then stir until fully combined.
  10. Transfer the caramel to a container, cover it with plastic wrap pressed onto the surface, then chill it overnight.
  11. For the cake, mix 120 ml liquid milk with 1 tbsp lemon juice, stir, then leave it to thicken.
  12. Sift 100 g plain flour, 50 g cocoa powder, 1/2 tsp baking powder, 1/2 tsp baking soda and 1/4 tsp salt, then stir together and set aside.
  13. Whisk 1 egg with 130 g granulated sugar until evenly combined.
  14. Add 60 ml cooking oil, the buttermilk and a little vanilla, then stir until combined.
  15. Add the dry ingredients in two additions and stir until evenly combined.
  16. Brew one sachet of coffee with 120 ml hot water, then pour it into the batter and stir until combined.
  17. Pour the batter into 22 x 10 cm tins brushed thinly with margarine and lined with baking paper.
  18. Bake at 170 degrees Celsius for about 20 to 25 minutes.
  19. Take the cakes out of the oven, run a knife around the edges, turn them out of the tins, then peel off the baking paper.
  20. The next day, briefly whip the cold chocolate ganache until it sets up more, then put it into a piping bag.
  21. Whip the caramel too, until it pales slightly and sets up more, then put it into a piping bag.
  22. Place the first cake layer down, pipe chocolate ganache around the edge and whipped caramel in the middle, then level it.
  23. Stack the second cake layer, repeat the ganache and caramel, then top with the third layer.
  24. Smooth the sides, then cover the whole cake with chocolate ganache and finish it with a scraper.
