Steps

  1. Spread the whole almonds out on a tray, then bake in a preheated oven at 150 degrees Celsius with top and bottom heat for about 10 to 15 minutes.
  2. After about five minutes, turn the almonds so they toast evenly, then take them out and let them cool so they turn crisp.
  3. Put the butter and icing sugar into a bowl, then mix with a spatula or a mixer on the lowest speed until smooth and evenly combined.
  4. Add the egg yolks, then stir again until evenly combined.
  5. Add the cornstarch, low protein wheat flour, rice flour, milk powder, and almond meal, then mix until the dough comes together.
  6. Knead briefly by hand until the dough is soft, no longer sticky, and can be shaped.
  7. Scoop the dough with a one and a half teaspoon measure, about 12 grams, so all the pieces are the same size.
  8. Flatten each piece, put a roasted almond in the middle, wrap it up, then roll it into a smooth oval.
  9. Place the shaped cookies on a baking tray.
  10. Bake in a preheated oven at 170 degrees Celsius with top and bottom heat for about 20 minutes until the base of the cookies is browned.
  11. Take the tray out of the oven, bake the remaining dough, then leave the cookies until cold.
  12. Heat water in a pot, then melt the dark cooking chocolate, cut into small pieces, over it.
  13. Add the white shortening so the chocolate sets more easily and turns out glossy, then stir until evenly combined.
  14. Dip the cooled cookies into the melted chocolate, then set them in paper cups.
  15. Scatter over the chopped roasted peanuts.
  16. Leave them until the chocolate sets and firms up, or chill them briefly in the fridge for about three minutes.
  17. Store the cookies in an airtight jar so they stay crisp and keep well.
