Ingredients

Filling:

Steps

  1. Brush a 28 by 28 cm tin thinly with margarine, then line it with baking paper.
  2. Put 6 eggs, 2 egg yolks, 1 teaspoon emulsifier, and 150 g granulated sugar into a bowl.
  3. Sift 120 g wheat flour, 20 g milk powder, and 20 g cornstarch into the mixture, then add 1 teaspoon vanilla.
  4. Beat at maximum speed for about 10 minutes until the batter is risen, thick, and holds a ribbon.
  5. Pour in 150 g melted margarine, then fold gently from the bottom up until combined with no batter settled underneath.
  6. Set aside about 4 tablespoons of batter for each colour, add 1 teaspoon mocha paste to one portion and 1 teaspoon chocolate paste to the other, then stir well.
  7. Transfer both coloured batters into piping bags.
  8. Pour the plain batter into the tin, level it, then tap the tin a few times.
  9. Pipe the chocolate batter and then the mocha batter over the surface, then drag a skewer through the top only to make a pattern.
  10. Bake in the preheated oven at 180 degrees Celsius with top and bottom heat for about 30 minutes until the surface is dry and a skewer comes out clean.
  11. While still hot, run a knife around the edges of the tin, turn the sponge out, then peel off the baking paper.
  12. Spread Nutella evenly over the sponge.
  13. Roll up the sponge using the baking paper, pressing to keep it tight.
  14. Chill the roll in the fridge for about 10 minutes so it firms up, then slice and serve.
