Ingredients

Steps

  1. Put 1500 ml thick coconut milk from 2 grated coconuts, 1 tsp salt, and 2 pandan leaves into a pot.
  2. Cook the coconut milk over medium-low heat, stirring constantly, until it boils and the oil separates, then turn off the heat and let it cool.
  3. Put 10 medium eggs, 400 g granulated sugar, and 2 tsp vanilla into a bowl, then stir until the sugar dissolves.
  4. Add 500 g glutinous rice flour, then stir until evenly combined.
  5. Pour in 1200 ml of the cooled coconut milk a little at a time while stirring until evenly combined.
  6. Add 300 g sweetened condensed milk and 100 g melted margarine, then stir until evenly combined.
  7. Strain the batter to make sure there are no lumps.
  8. Take 600 ml of the batter, add 1 tsp pandan paste, then stir until evenly combined for the middle layers.
  9. Grease a 20x20 cm tin thinly with margarine, then line it with baking paper.
  10. Pour about 165 ml of the plain batter into the tin, then level it with a spoon or spatula.
  11. Preheat the oven for 10 minutes, place the tin on the middle rack, then bake at 180 degrees Celsius with top and bottom heat for about 15 minutes until the surface is golden brown.
  12. While still hot, prick any bubbles on the surface, then press the layer down firmly with a cake press, working quickly so each layer bonds to the next.
  13. Pour in another 165 ml of batter, level it, then bake again for about 15 minutes at the same temperature using top heat only.
  14. Take the tin out, prick any bubbles on the surface, then press the layer down again.
  15. Repeat this layer by layer, and on the seventh layer pour in the green batter, divided into four layers.
  16. Once the green layers are done, go back to the plain batter until you have 16 layers in total.
  17. Bake the last layer for about 15 minutes until the surface is golden brown, then take the tin out of the oven.
  18. Let the cake cool completely, run a knife around the edges, then turn it out and slice to serve.
