Steps

  1. Steam the chicken breast for about 20 minutes over medium heat in a steamer with already boiling water.
  2. Test with a skewer, take the chicken out, drain it, let it cool, then shred the meat.
  3. Put the glutinous rice that has been washed clean, soaked overnight or for at least three hours, and drained into the steamer, then level it out.
  4. Steam the rice for about 20 minutes or until half cooked.
  5. Put the coconut milk already mixed with salt, the bruised lemongrass, bay leaves, and pandan leaves into a pot.
  6. Cook over medium heat while stirring constantly so the coconut milk does not split, until it boils, then turn off the heat.
  7. Take the half cooked rice out of the steamer, then stir it.
  8. Pour the boiled coconut milk into the rice, then stir until it is absorbed.
  9. Add the leaves to the rice so they steam with it and perfume the rice.
  10. Steam again for about 20 minutes or until the rice is cooked and soft, then stir it and take it out of the steamer.
  11. Grind the shallots, garlic, and candlenuts with a little coconut milk.
  12. Heat a little cooking oil in a wok, then add the spice paste and stir briefly.
  13. Add the bruised lemongrass, bay leaves, and torn kaffir lime leaves, then stir until evenly combined.
  14. Add the ground coriander, salt, ground pepper, and sugar, then fry until fragrant.
  15. Add the shredded chicken and the rest of the coconut milk, then cook over medium heat, stirring occasionally, until dry, then turn off the heat.
  16. Soften the banana leaves over a low flame, then cut them to about a hand span in size.
  17. Put about two tablespoons of the sticky rice in the middle of a banana leaf, then shape and flatten it.
  18. Spoon about one tablespoon of the chicken filling into the centre, cover it with the rice, then press it firmly.
  19. Roll up the banana leaf, fold the ends, trim off the excess leaf to neaten it, then staple or pin it with a bamboo sliver.
  20. Heat a pan brushed with a little cooking oil, then add the parcels a few at a time.
  21. Grill over low heat, turning them, until the leaves are browned and the parcels are heated through, then take them off.
