Ingredients

Steps

  1. Prepare a bowl and add 600 g margarine and 360 g powdered sugar.
  2. Beat on low speed first, then raise it to maximum for about 10 minutes until the mixture is light, soft and pale.
  3. Add 280 g egg whites, then beat on maximum speed for about 2 minutes until evenly combined.
  4. Sift 480 g low-protein wheat flour into the mixture.
  5. Add 120 g cornstarch, 40 g milk powder and 1 tsp vanilla powder.
  6. Stir briefly first so the flour does not fly about, then beat on the lowest speed until evenly combined.
  7. Continue folding with a spatula to make sure the batter is fully combined.
  8. Put the batter into a piping bag and snip about one centimetre off the tip.
  9. Grease a cat's tongue tray with margarine, fairly generously.
  10. Pipe the batter down the middle of each groove until the tray is filled.
  11. Preheat the oven for about 10 minutes, then bake at 175 degrees Celsius with top and bottom heat for about 20 minutes until the cookies are done.
  12. Once the edges pull away from the tray and the colour is golden brown, take the tray out of the oven.
  13. Leave the cookies until just warm, then release them from the tray by pushing with a chopstick.
  14. Grease the tray with margarine again before using it a second time.
  15. Put the cookies straight into an airtight jar so they stay crisp and keep well.
  16. For a polka dot pattern, take 3 tbsp of the batter and mix it with half a teaspoon of cocoa powder, stirring until evenly combined.
  17. Put the cocoa batter into a piping bag, snip a little off the tip, then pipe a pattern over the unbaked cookies.
  18. For other versions, scatter chocolate sprinkles over the batter or pipe Nutella on top, then bake in the same way and for the same time.
  19. For a filled version, pipe Nutella into the middle of one cookie, then sandwich it with another and press them together.
