Ingredients

Vanilla custard:

Steps

  1. Put 1 tbsp plain nutrijel, 1 tsp coffee powder, and 3 tbsp granulated sugar into a pot and stir until combined.
  2. Add 350 ml water and 1/4 tsp mocha paste then stir until evenly combined.
  3. Cook over medium heat, stirring occasionally, until it boils, then turn off the heat.
  4. Pour the jelly into a container then leave it to set firm.
  5. Put 1 packet of white agar agar powder, 1 sachet of instant coffee, 1 tsp cornstarch, and 100 g granulated sugar into a pot and stir.
  6. Add 700 ml milk then stir until evenly combined.
  7. Cook over medium heat, stirring occasionally, until it boils, then turn off the heat.
  8. Stir briefly until the steam has gone.
  9. Once the jelly has set, cut it into pieces.
  10. Put some of the jelly into the mould then pour in the coffee pudding slowly and evenly.
  11. Wait about 2 minutes so the pudding firms up and the jelly does not float.
  12. Add the rest of the jelly then pour in the remaining coffee pudding, and let the surface form a skin.
  13. Put 1 packet of white agar agar powder, 100 g granulated sugar, 1 1/2 tbsp coffee powder, and 1 tsp cornstarch into a pot and stir.
  14. Add 700 ml milk then stir until evenly combined.
  15. Cook over medium heat, stirring occasionally, until it boils, then turn off the heat.
  16. Pour it slowly and evenly over the pudding layer, pricking the surface with a fork first if it has already hardened.
  17. Put 1 packet of white agar agar powder, 1 tsp cornstarch, and 700 ml coconut milk into a pot and stir.
  18. Add 150 g chopped palm sugar, 1 pandan leaf, and 1/2 tsp mocha paste.
  19. Cook over medium heat while stirring constantly until it boils and the sugar dissolves so the coconut milk does not split.
  20. Pour the palm sugar pudding slowly and evenly into the mould.
  21. Let the pudding set then chill it in the fridge for at least about 4 hours.
  22. Turn the pudding out of the mould then slice it and serve it with vanilla custard.
