Ingredients

Steps

  1. Blend 7 pandan leaves snipped into small pieces with 300 ml of water, then strain and take 250 ml of the pandan juice.
  2. Mix 200 g of glutinous rice flour with a quarter teaspoon of salt, then stir until combined.
  3. Add 250 ml of pandan juice, then stir until the batter is smooth and free of lumps.
  4. Add 250 ml of thick coconut milk, then keep stirring until combined.
  5. Add half a teaspoon of pandan paste if the colour is not green enough, then stir until even.
  6. Cook 250 g granulated sugar with 250 ml thick coconut milk over the lowest heat, stirring constantly, until the sugar dissolves.
  7. Add the pandan batter to the pan, then cook over the lowest heat, stirring constantly, for about 60 to 70 minutes until it dries out and becomes firm.
  8. Turn off the heat once the mixture pulls together, feels heavy to stir, and no longer sticks when pressed with plastic, then let it cool.
  9. Scoop about 15 g of dodol with a spoon lightly brushed with oil, then dip one end into the toasted sesame seeds.
  10. Wrap each piece in plastic into a pyramid shape, press it firm, then tuck in the loose plastic so it stays closed.
