Open offline saves

Ingredients

Steps

  1. Divide 240 g sago pearls into 4 portions of about 60 g each.
  2. Divide the water into 4 portions, add 5 drops of a different food colouring to each, and stir.
  3. Pour the coloured water over each portion of sago, stir, then leave about 5 minutes until the water is absorbed.
  4. Add 1 tbsp tapioca starch to each portion of sago then stir until combined.
  5. Scoop the mixture with a 1 teaspoon measure and press it into balls until it is all used.
  6. Bring 1 litre of water to the boil over medium heat.
  7. Add the sago balls then boil until they all float.
  8. Once they all float, lift them out and drain them.
  9. Rinse the balls with room temperature water to stop the cooking, then drain them.
  10. Put 150 g granulated sugar, 1/2 tsp salt, 250 ml young coconut water, and 500 ml medium thick coconut milk into a pot.
  11. Cook over medium heat while stirring constantly until it boils so the coconut milk does not split.
  12. Add the scraped flesh of 1 young coconut then cook until it boils again.
  13. Turn off the heat then let the coconut broth cool.
  14. Put the sago balls into serving cups then pour the coconut broth over them.
  15. Add pieces of jackfruit to make it taste better.
  16. Chill it in the fridge for about 2 hours then serve.
