Ingredients

Steps

  1. Put 125 g of sago pearls, 1 teaspoon of pandan paste, and 200 ml of water into a bowl, stir until evenly combined, then set aside.
  2. Put 125 g of sago pearls, 200 ml of water, and 10 drops of red food colouring into another bowl, stir until evenly combined, then set aside.
  3. For the third portion, mix 125 g of sago pearls with 200 ml of water and no colouring so it stays white.
  4. Leave all three mixtures to stand for about five minutes.
  5. Strain the sago pearls then let them drain briefly until the water runs off, and do the same for the red and the white portions.
  6. Add 125 g of the white part of grated young coconut and a quarter teaspoon of salt to the green sago pearls, then stir until evenly combined.
  7. Do the same with the red and the white sago pearls, each with 125 g of grated coconut and a quarter teaspoon of salt.
  8. Roll a banana leaf that has been softened over a low flame into a cone.
  9. Spoon about 1 tablespoon of the red mixture into the leaf cone, then spoon in about 1 tablespoon of the white mixture.
  10. Add pieces of palm sugar to taste, then cover them with a little more of the white mixture.
  11. Spoon about 1 tablespoon of the green mixture on top, then pack it down by pressing gently.
  12. Close and wrap it up tightly by folding, snip the tip a little, then tuck the end into the fold of the leaf.
  13. Repeat until all the mixture has been wrapped.
  14. Put the wrapped cakes into a steamer of boiling water, then steam for about 30 minutes over medium heat until they are done.
  15. Lift the cakes out of the steamer, leave them until cool, then serve.
