Ingredients

Steps

  1. Prepare 300 gr of grated coconut, using only the white part.
  2. Add 2 tbsp of cornstarch and 1 tsp of salt, then stir until evenly combined.
  3. Steam the grated coconut for about 10 minutes over medium heat so it does not spoil quickly.
  4. Prepare a bowl and add 4 eggs, 240 gr of granulated sugar, and 1 tsp of emulsifier.
  5. Beat for about 10 minutes at maximum speed until the batter is risen, thick, and holds a trail.
  6. Once the mixer trail no longer sinks quickly, turn off the mixer.
  7. Add 300 gr of wheat flour, 2 tbsp of tapioca flour, and 1/2 tsp of salt, sifting them to make sure there are no lumps.
  8. Fold the batter briefly with a spatula so the flour does not fly around when mixing.
  9. Turn the mixer on at the lowest speed and mix the batter until evenly combined.
  10. Add 260 ml of instant coconut milk gradually, a little at a time, while mixing on low speed until evenly combined.
  11. Add 2 tsp of pandan paste.
  12. Fold the batter from the bottom up and make sure no liquid has settled at the bottom, because leftover liquid will make the cake dense.
  13. Add 1 tsp of vanilla then stir until evenly combined.
  14. Brush the jelly moulds thinly with cooking oil.
  15. Put the steamed grated coconut into the moulds then press it down with a spoon.
  16. Pour half of the batter into the moulds and set the rest aside.
  17. Tap the moulds a few times so trapped air can escape.
  18. Heat the steamer until the water boils, then put in the moulds filled with batter.
  19. Steam for about 10 minutes over medium heat, lining the steamer lid with a clean cloth so condensation does not drip onto the batter.
  20. After 10 minutes, open the lid and add 200 gr of finely sliced palm sugar.
  21. Pour in the remaining batter.
  22. Continue steaming for about 25 minutes over medium heat or until the cakes are cooked.
  23. Do a skewer test; if no batter sticks to it, the cakes are done.
  24. Lift the moulds out of the steamer.
  25. Let the cakes cool, then turn them out of the moulds and slice as you like.
