Palm Sugar Pudding Ingredients:

Fermented Cassava Pudding Ingredients:

Steps

  1. In a pot, put 1 sachet of white agar powder, a pinch of salt, and part of the 700 ml of medium-thick coconut milk, then stir until combined.
  2. Add 200 g of palm sugar chopped small, then pour in the rest of the coconut milk.
  3. Cook over medium heat, stirring constantly so the coconut milk does not split, until it boils, then turn off the heat.
  4. Wet a 20 x 20 cm tin with water, then pour the mixture into the tin through a strainer to remove the residue.
  5. Skim off the foam and pop any air bubbles in the mixture, then leave it until the palm sugar layer sets.
  6. For the cassava layer, put 350 g of fermented cassava with the fibrous core removed, a pinch of salt, 100 g sweetened condensed milk, 1 sachet of white agar powder, and 700 ml of coconut milk into a chopper.
  7. Blend until smooth and evenly combined.
  8. Cook the mixture over medium heat, stirring constantly so the bottom does not catch and the coconut milk does not split, until it boils.
  9. Set aside about 2 spoonfuls of the mixture, add brown food colouring to taste, then stir until evenly coloured.
  10. Add yellow food colouring to taste to the rest of the mixture, then stir until evenly coloured.
  11. Prick the surface of the palm sugar layer with a fork so the layers stick together and do not separate when turned out.
  12. Pour the cassava mixture into the tin slowly and spread out so the palm sugar layer does not sink.
  13. Draw a pattern on the surface using the brown coloured mixture.
  14. Leave it until the pudding sets, then chill it in the fridge for at least about 3 hours.
  15. Turn the pudding out of the tin, then slice it and serve.
