Ingredients

Steps

  1. Put 40 gr red chilies or about 20 pieces, 3 cloves of garlic, and 60 gr shallots or about 10 cloves into the chopper.
  2. Add a little cooking oil so the paste grinds more easily, then blend until smooth and evenly combined.
  3. Prepare the other ingredients: 1 stalk of lemongrass to be bruised, 100 gr green chilies, 5 bay leaves, 1 tomato, 1 thumb of galangal, and 1 thumb-length of ginger.
  4. Slice the green chilies.
  5. Prepare 50 gr dried tofu that has been snipped into small pieces so they are neat and even in size.
  6. Heat oil in a wok, add the dried tofu, then fry it briefly until it puffs up, using medium to low heat.
  7. Once the dried tofu has puffed and turned speckled, lift it out and drain it.
  8. Heat a little oil, add the ground spice paste, then saute until fragrant, stirring constantly so the bottom does not scorch.
  9. Once the paste is fragrant, add the sliced green chilies, then cook briefly until the green chilies wilt.
  10. Once the green chilies have wilted, add 350 gr shrimp, net weight after the heads are removed. The body shells are left on so the broth tastes richer.
  11. Add the bruised lemongrass, bay leaves, galangal, and bruised ginger, stir until evenly combined, then cook briefly until the shrimp change color.
  12. Once the shrimp change color, pour in 500 ml water and stir until evenly combined.
  13. Add 50 gr petai, net weight after peeling, split into two equal halves.
  14. Add 2 tbsp tauco and 25 gr palm sugar, about 2 tbsp, then stir until evenly combined.
  15. Cover the pot, then cook over medium heat until it boils.
  16. Once it boils, add 1 tsp salt and 1 tsp granulated sugar. Adjust the salt later if it is not salty enough.
  17. Add the fried dried tofu, stir until evenly combined, then keep cooking until the dried tofu softens.
  18. Once the dried tofu has softened and the liquid has thickened slightly, add the sliced tomato, then cook briefly until the tomato wilts.
  19. Once the broth is fully boiling and the tomato has wilted, the shrimp tauco is done. Serve it with steamed rice, or with lontong and rendang.
