Bubur Cha Cha with Sweet Potato and Sago Pearls

Open offline saves

Ingredients

Steps

  1. Peel and wash 300 g purple sweet potato and 300 g orange sweet potato then steam about 15 minutes until soft.
  2. Boil water in a pot, add 150 g sago pearls, cover the pot, and boil about 5 minutes over medium heat.
  3. Turn off the heat then leave the pot covered for about 30 minutes so the pearls finish cooking on their own.
  4. Put 225 g tapioca starch into a bowl then pour in 170 ml hot water a little at a time while stirring.
  5. Knead by hand until the dough is smooth and can be shaped.
  6. Divide the dough in two, add 2 drops of green colouring to one and 2 drops of pink to the other, then knead until even.
  7. Roll the dough into small balls then dust them with tapioca starch so they do not stick together.
  8. Sieve the balls to shake off the excess starch.
  9. Boil the tapioca balls until they all float, then lift them out and drain.
  10. After 30 minutes, boil the sago pearls about 7 more minutes until they are fully translucent.
  11. Rinse the sago pearls twice in room temperature water then drain them.
  12. Put 150 g granulated sugar, 250 ml water, 1 pandan leaf, and 1/4 tsp salt into a pot and cook over medium heat until the sugar dissolves.
  13. Add 800 ml medium thick coconut milk then cook over medium heat, stirring constantly, until it boils so the coconut milk does not split.
  14. Add the sago pearls and the tapioca balls.
  15. Cook until it boils again while stirring constantly, then turn off the heat.
  16. Serve the bubur cha cha with the steamed sweet potato pieces, warm or cold as you like.
