Ingredients

Steps

  1. Make the tin coating by stirring 1 tablespoon flour, 1 tablespoon margarine, and 1 tablespoon cooking oil until evenly combined.
  2. Brush a 24 cm diameter tin thinly with the coating mixture.
  3. Put 300 gr butter mixed with margarine and 200 gr powdered sugar into a bowl.
  4. Beat for about 10 minutes until the mixture is fluffy and pale, starting on low speed so the powdered sugar does not fly out, then moving to maximum speed.
  5. With the mixer on the lowest speed, add 6 eggs one at a time, beating until evenly combined after each addition.
  6. Mash the peeled ripe bananas, leaving a little texture so the cake still has banana pieces in it.
  7. Add the mashed banana to the batter and beat on low speed until evenly combined.
  8. Sift 250 gr medium-protein wheat flour, 20 gr cornstarch, 30 gr milk powder, and 1½ teaspoons baking powder into the batter.
  9. Fold briefly with a spatula so the flour does not fly out when the mixer is turned back on.
  10. Beat on the lowest speed until the batter is evenly combined.
  11. Finish by folding with a spatula to make sure the batter is fully combined.
  12. Pour the batter into the tin.
  13. Level the batter with a spoon or spatula, then smooth it again with a skewer so the cake crumb is fine.
  14. Preheat the oven for about 10 minutes, then bake at 170 degrees Celsius with top and bottom heat for about 50 minutes until the cake is done.
  15. Test with a skewer; when no batter clings to it, take the tin out of the oven.
  16. Once the cake is just warm, turn it out of the tin.
  17. Slice the cake and serve.
