Steps

  1. Bring water to a boil in a pot, set a bowl holding 75 g dark cooking chocolate on top, then add 80 ml cooking oil and 40 g margarine.
  2. Melt over the double boiler until the chocolate and margarine are melted and evenly combined, then lift the bowl off and set it aside.
  3. In another bowl, add 150 g granulated sugar, 4 eggs, and 1/2 tsp emulsifier.
  4. Mix on maximum speed for about 7 to 10 minutes until the batter is fluffy, thick, and holds a ribbon, then turn off the mixer.
  5. Sift 100 g medium protein wheat flour, 30 g cocoa powder, and 1/4 tsp baking powder into the batter.
  6. Stir briefly so the flour does not fly around, then mix on the lowest speed just until evenly combined.
  7. Continue folding with a spatula to make sure the batter is evenly combined.
  8. Add the melted chocolate, margarine, and oil mixture, then fold gently from the bottom up until evenly combined.
  9. Grease the base of a 20x20 cm tin with margarine, pour in the batter, level it, then tap the tin a few times.
  10. Put the tin into the steamer with the water already boiling, line the flat steamer lid with a clean cloth, then steam for about 30 minutes over low heat.
  11. Do a skewer test; if no batter sticks to it, lift the tin out of the steamer and let the cake cool.
  12. In a bowl, whip 3 egg whites on medium speed until they start to foam.
  13. Add 1 tbsp lime or lemon juice, then keep whipping until the egg whites reach soft peaks, then turn off the mixer.
  14. In a saucepan, add 100 g granulated sugar, 1 packet white agar powder, and 1/4 tsp salt, then stir them together dry so they will not clump later.
  15. Add 500 ml liquid milk and 1 tsp vanilla, then stir until evenly combined.
  16. Cook until boiling over medium heat while stirring constantly, then turn off the stove.
  17. While still hot, pour the pudding straight into the egg whites, then mix on low speed until evenly combined.
  18. Pour the foam pudding over the cake in the tin, then leave it until the surface forms a skin or firms up slightly.
  19. Add toppings to taste; I use canned mandarin orange, strawberry, and kiwi.
  20. For the clear pudding, add 50 g granulated sugar and 1 packet white agar powder to a saucepan, stir them together, then add 500 ml water and stir again until evenly combined.
  21. Cook until boiling over medium heat while stirring constantly, then turn off the stove.
  22. While still hot, pour the clear pudding into the tin slowly so the fruit does not shift.
  23. Leave until the pudding sets and firms up; you may chill it in the refrigerator.
  24. Release the cake from the tin by running a thin stick around the edges, then cut the cake and serve.
