Steps

  1. Prepare a bowl, add 150 g butter, 175 g margarine, and 200 g icing sugar.
  2. Beat at low speed until evenly combined, then raise it to maximum speed until the mixture is fluffy and pale.
  3. After about 10 minutes of beating, add 8 egg yolks one at a time, beating at low speed until evenly combined after each one.
  4. Add 180 g wheat flour, 20 g milk powder, and 30 g cocoa powder, sifting them in.
  5. Fold briefly first so the flour does not fly about, then beat at the lowest speed until the batter is evenly combined.
  6. Continue folding the batter with a spatula, then set the batter aside.
  7. Prepare a bowl, add 7 egg whites and 1/4 tsp salt, then beat at medium speed to soft peaks.
  8. Once the whites start to foam, add 50 g granulated sugar gradually in three additions.
  9. Add 1 tbsp lemon juice, then keep beating to soft peaks, do not overmix.
  10. Add a little of the chocolate batter to the egg white mixture, then fold until evenly combined.
  11. Add the egg white mixture into the chocolate batter in stages, then fold until evenly combined.
  12. Add 1 tsp chocolate paste, then fold until evenly combined.
  13. Melt 45 g margarine together with 75 g dark cooking chocolate until melted and evenly combined, then set it aside.
  14. Prepare a bowl, add 60 g granulated sugar and 1 egg, stir until evenly combined and the sugar has dissolved.
  15. Add the melted chocolate and margarine, then stir until evenly combined.
  16. Add 50 g wheat flour and 10 g cocoa powder, then stir until the batter is evenly combined.
  17. Add about three ladles of the cake batter into the brownie batter, then stir briefly just until combined.
  18. Pour the cake batter into a 24 cm round tin that has been greased with tin coating mixture.
  19. Pour the brownie batter on top.
  20. Tap the tin a few times so trapped air can escape from the batter.
  21. Bake at 150 degrees Celsius using top and bottom heat for about 50 to 60 minutes until the cake is done.
  22. After about 60 minutes of baking, do a skewer test, then take the tin out of the oven.
  23. Turn the cake out of the tin.
