🎀Coconut Milk Pudding Ingredients:

Steps

  1. Put 1 packet of young coconut flavoured jelly powder, 75 g of granulated sugar, and a pinch of salt into a pot, then stir until evenly combined.
  2. Pour in 700 ml of medium-thick coconut milk, stir well, then cook over medium heat while stirring constantly until it boils.
  3. Turn off the heat, pour a little of the mixture into a 24 cm diameter mould and leave it to set, then pour the rest into another container and leave it to firm up.
  4. Scrape the set coconut jelly into shreds.
  5. For the pandan pudding, put 1 packet of white agar powder, 1 packet of plain jelly powder, and 150 g of granulated sugar into a pot, then stir until evenly combined.
  6. Pour in 200 ml of pandan juice and 1,200 ml of water, stir well, then cook over medium heat while stirring constantly until it boils, then turn off the heat.
  7. For the coconut milk pudding, put 2 packets of white agar powder, 150 g of granulated sugar, and a pinch of salt into a pot, then stir until evenly combined.
  8. Pour in 1,200 ml of medium-thick coconut milk and 200 ml of pandan juice, stir well, then cook over medium heat while stirring constantly until it boils so the coconut milk does not split.
  9. While it is still hot, pour the coconut milk mixture slowly into the mould so the coconut jelly does not float up.
  10. Leave it for about 3 minutes until the surface is half set, then pour the pandan mixture slowly on top.
  11. After about 3 minutes, place coconut jelly on top, then pour the coconut milk mixture over it.
  12. Alternate the layers until all the mixtures are in the mould, reheating a mixture over the lowest heat whenever it starts to thicken.
  13. Leave it until the pudding sets, then chill in the fridge for 1 hour before turning it out of the mould and serving.
