Ingredients

Custard filling:

Caramel:

Steps

  1. For the filling, put 80 g cornstarch, 150 g granulated sugar, 1/4 tsp salt, 2 egg yolks, 1 tsp vanilla, and 800 ml liquid milk into a saucepan.
  2. Stir until the mixture is smooth, slick, and free of lumps.
  3. Turn on medium heat and cook until boiling and thickened while stirring constantly so the bottom does not scorch or clump.
  4. Once it boils, thickens, and bubbles, turn off the stove.
  5. Add 30 g margarine, then stir until the margarine melts and is evenly combined.
  6. While still hot, cover the surface of the custard with plastic so it does not form a skin, then leave it to cool.
  7. In a bowl, add 400 g high protein wheat flour, 100 g medium protein wheat flour, 75 g powdered sugar, 10 g milk powder, 2 tsp instant yeast, 2 egg yolks, 1 egg, 1/2 tsp vanilla, and 225 ml cold liquid milk.
  8. Mix the dough on medium speed until half smooth.
  9. Add 100 g margarine and 1 tsp salt, then keep mixing for about 15 minutes until the dough is smooth and elastic.
  10. Take a little dough and stretch it out; if it does not tear easily and turns transparent, the dough is smooth and elastic.
  11. Round the dough, then divide it into equal portions of about 50 g each.
  12. Round each portion until smooth and set them out in the order they were rounded, since that is the order they will be fried in.
  13. Cover the dough and leave it until doubled in size, about 1 hour.
  14. Heat oil in a pot over low heat, add a few pieces at a time, then fry over low heat until done; flip only once so they do not soak up much oil.
  15. Once both sides are browned, lift the bomboloni out and drain them, then leave them to cool.
  16. Put the cooled custard into a piping bag, poke a small hole in the side of each bomboloni, then pipe in enough filling.
  17. In a saucepan, melt 250 g granulated sugar over the lowest heat until it turns to caramel, so it does not taste bitter and the colour does not go too dark.
  18. Keeping the flame on and the caramel hot, dip each bomboloni straight into the caramel, then lift it out immediately and set it on a cooling rack.
