Cheesy Brulee Bombs (Bitterballen Style)

  1. Finely chop the onion.
  2. Finely chop the garlic.
  3. Cut the smoked beef into small pieces.
  4. Saute the onion until fragrant and translucent.
  5. Add the garlic and smoked beef, cook until done and slightly dry, then set aside.
  6. In the same pan, melt the unsalted butter.
  7. Add the all-purpose flour and cook until it no longer smells of raw flour.
  8. Pour in the milk a little at a time, whisking until the mixture is smooth and thick.
  9. Return the sauteed smoked beef and aromatics to the pan and stir until combined.
  10. Season with salt, black pepper, a little sugar, and chicken powder.
  11. Add the quick melt cheese and stir until melted and fully combined.
  12. Spread the mixture flat in a container and let it cool until firm.
  13. Portion the mixture into 15 to 20 gram pieces.
  14. Wet your hands with water, flatten each portion, fill it with a piece of cheese, then roll it into a sealed ball.
  15. Arrange the balls in a container and chill for about 30 minutes until firm.
  16. Set up three coating bowls with all-purpose flour, beaten egg, and panko breadcrumbs.
  17. Roll each ball in flour, dip it in egg, then coat it in panko until the whole surface is covered.
  18. Make a dipping sauce from mayonnaise, chilli sauce, and a sprinkle of chilli flakes.
  19. Heat the oil and fry the balls until golden brown, turning them as they cook, then drain them.
