Steps

  1. For the ebi furai, slice the spring onion and divide it into three parts, the white part for charring, one part for garnish, and one part soaked in cold water so it curls.
  2. Make the dipping sauce by mixing mayonnaise, chilli sauce, tomato ketchup and hoisin sauce, then stir until smooth.
  3. Deep fry the frozen ebi furai until golden brown, then drain.
  4. Char the white part of the spring onion in a pan until the edges blacken so the aroma comes out.
  5. Arrange the ebi furai on a plate with the sauce and the spring onion garnish.
  6. For the tomato egg with shrimp popcorn, heat a little oil and make soft scrambled eggs, then set them aside.
  7. Add another one or two spoons of oil, then fry the chopped garlic until browned and fragrant.
  8. Add the sliced tomato and onion, then add tomato sauce, water and stock powder.
  9. Deep fry the frozen shrimp popcorn until cooked and crisp, then drain.
  10. Season the sauce with a little sugar and salt, return the scrambled egg to the pan, stir through and serve with the shrimp popcorn.
  11. For the Japanese curry, fry the onion, carrot and potato in a little oil.
  12. Add water, then drop in the instant Japanese curry block and stir until it dissolves and the sauce thickens.
  13. Add more water if it gets too thick, then cook until the potato and carrot are completely tender.
  14. Fry the large ebi furai until cooked, then serve them with the curry.
