Ingredients

Sambal ingredients:

Steps

  1. Blend 10 red chillies, 15 shallots, 10 cloves of garlic, half a thumb of ginger, 2 eggs, 2 teaspoons of ground coriander, 1/2 teaspoon of ground pepper, 1/2 teaspoon of powdered stock, and 1 teaspoon of salt in a blender.
  2. Slit the top of 1 kg of chicken thighs so they open out like a fan.
  3. Add 80 g of cornstarch, 80 g of tapioca starch, and 25 g of wheat flour, then add the blended spice paste and stir until evenly combined.
  4. Cover the container with plastic wrap, then marinate in the fridge for about 1 to 2 hours.
  5. Boil 100 g of red bird's eye chillies, 20 g of red chillies, and 35 g of garlic in boiling water for about 10 minutes over medium heat until softened, then lift out and drain.
  6. Blend the chillies and garlic while they are still hot, only briefly so the texture does not become too fine.
  7. Heat enough oil, then cook the blended paste over medium heat while stirring constantly until fragrant and the oil separates.
  8. Add 1/2 teaspoon of salt, 1 teaspoon of powdered stock, and 1 teaspoon of granulated sugar, then cook briefly until evenly combined and adjust the seasoning.
  9. Fry the marinated chicken in hot oil over medium to low heat while turning it over until it turns golden brown.
  10. Lift out and drain the chicken, then let it rest for about 10 minutes.
  11. Fry the chicken again briefly in hot oil until it is browned and the skin is crisp, then lift it out and drain.
  12. Serve the fan-cut fried chicken warm with the garlic chilli sambal.
