Peanut sauce:

Steps

  1. In a chopper, put 500 g chicken meat, 1 egg, 100 ml ice water, 7 cloves of grated garlic, and 2 tbsp fried shallots, then chop until smooth and evenly combined.
  2. Transfer the mixture to another bowl.
  3. Add 200 g tapioca flour, 50 g wheat flour, 1 tsp bouillon powder, 1 tsp ground pepper, 1 tsp salt, and 2 stalks of sliced spring onion that have been lightly fried, then stir until evenly combined.
  4. Take a little of the mixture and press it with a fork so it takes on a ruffled shape.
  5. Drop each piece into boiling water with the stove kept on the lowest flame, and repeat until all the mixture is shaped.
  6. Boil for about 5 minutes until they hold their shape, then lift the pentol out of the pot and move them into a preheated steamer.
  7. Spoon some of the mixture into pieces of cut tofu skin, then score the surface so it looks ruffled.
  8. Boil the filled tofu for about 3 to 5 minutes, then move them into the preheated steamer.
  9. Steam for about 20 minutes or until the pentol are cooked through, then turn off the stove.
  10. Heat enough cooking oil, add 250 g peanuts that have been washed and drained, then fry over medium heat, turning them, until golden, and lift them out to drain.
  11. While still hot, grind the peanuts in a chopper or a mortar, then add 200 g steamed potato so the sauce turns out thick.
  12. For the spice paste, put 120 g red chillies, 60 g shallots, 40 g bird's eye chillies, and 50 g garlic into a chopper, add a little cooking oil, then grind until smooth.
  13. Heat a little oil in a pot, add the spice paste and 5 kaffir lime leaves, then sauté until fragrant, stirring occasionally.
  14. Add the ground peanuts and potato along with 600 ml water, stir until evenly combined, then cook until boiling and the paste releases its oil.
  15. Add 120 g palm sugar, 3 tbsp granulated sugar, 1 tsp salt, 1/2 tsp bouillon powder, 50 ml tamarind water made from 2 tsp tamarind dissolved in 50 ml hot water, and 110 g sweet soy sauce.
  16. Keep cooking until the sugar dissolves and it boils again, stirring occasionally, then turn off the stove and serve the peanut sauce with the pentol.
