KULUYUK CHICKEN OR SOUR AND HOT CHICKEN

  1. Cut 300 g of boneless skinless upper chicken thigh into pieces and season with 1 tsp of salt and pepper.
  2. Add 1 tsp of sesame oil, 1 tsp of soy sauce, 1 tsp of sugar and 1 tbsp of fish sauce.
  3. Add 1 tbsp of cornstarch and 1 whole egg, then mix everything until evenly combined.
  4. Marinate for 30 minutes.
  5. Mix 3 tbsp of all-purpose flour with 7 tbsp of cornstarch, half a teaspoon of salt and half a teaspoon of baking powder.
  6. Coat the marinated chicken in the dry flour mixture until every piece is covered.
  7. Heat a wok with enough oil and fry the chicken in small batches so the oil temperature does not drop and the chicken does not turn oily.
  8. Fry until golden and crisp, then lift out and drain.
  9. Cut half a carrot into matchsticks.
  10. Cut 2 stalks of scallion into long pieces and thinly slice half an onion.
  11. Bruise 5 cm of ginger and finely chop 4 cloves of garlic.
  12. Heat about 4 tbsp of oil and fry the bruised ginger until fragrant.
  13. Add the chopped garlic and fry until fragrant, without letting it change colour or the taste turns bitter.
  14. Add the scallion and onion and fry until fragrant.
  15. Add the carrot and cook until it softens slightly.
  16. Add 4 tbsp of chili sauce and 6 tbsp of tomato sauce.
  17. Add 2 tbsp of sesame oil, 1 tsp of mushroom bouillon and 1 tbsp of sugar.
  18. Pour in about 130 ml of water.
  19. Stir, let it come to a boil, then cook for about 5 minutes over low heat until the sauce thickens a little.
  20. Heat enough oil in a pot and fry the glass noodles for the garnish.
  21. Serve the fried chicken with the sauce and the fried glass noodles.
