  1. Slice 350 g of chicken breast, then mix it with 2 finely chopped cloves of garlic.
  2. Add 1.5 tbsp oyster sauce, 1 tbsp sesame oil, and 1/2 tsp white pepper, then set it aside for about half an hour.
  3. Cut 1/2 a green bell pepper, 1/2 an onion, 2 red curly chillies, and 70 g of pineapple.
  4. For the sauce, mix 6 tbsp tomato sauce, 1 tbsp Worcestershire sauce, 1 tsp Dixi vinegar, 40 g sugar, 1/2 tsp salt, 1/2 tsp mushroom bouillon, and 200 ml water.
  5. Add the bell pepper, pineapple, onion, and red curly chilli, then stir.
  6. Cook the sauce for about 5 minutes.
  7. Thicken the sauce with a cornstarch and water mixture until it reaches the consistency you like.
  8. Taste and adjust, then turn off the heat.
  9. Combine 150 g wheat flour, 75 g tapioca starch, 50 g cornstarch, 1/2 tsp baking powder, 1/3 tsp baking soda, 1/2 tsp mushroom bouillon, 1 tsp salt, and 1/2 tsp white pepper.
  10. Take 4 tbsp of that dry flour mix, add 30 ml of water, then stir until smooth.
  11. Add 1 egg, then stir again until combined.
  12. Pour the wet batter over the marinated chicken slices, then mix until it is absorbed by the chicken.
  13. Put the chicken pieces one at a time into the dry flour and coat every part thoroughly.
  14. Fry the chicken over fairly high heat for 2 to 3 minutes so it does not dry out.
  15. Lift out the chicken, then toss it with the sauce or serve the sauce separately as a dip so the chicken stays crispy.
