  1. For the spice paste, prepare 16 shallots.
  2. Prepare 5 cm of galangal and 5 cm of ginger.
  3. Prepare 7 cloves of garlic and 7 roasted candlenuts.
  4. Add 1/2 tsp cumin.
  5. Add enough oil, which will also be used to saute the paste later.
  6. Blend everything into a smooth paste.
  7. Saute the spice paste directly in the pot you will use for the broth, cooking it until the paste is properly done so it does not smell raw.
  8. Once the paste is cooked, add 1 small cinnamon stick.
  9. Add 1 star anise.
  10. Add 8 cloves and 4 cardamom pods, then saute briefly.
  11. Add 2 tsp coriander powder that has been dry roasted and ground.
  12. Add 3 bay leaves.
  13. Add 6 kaffir lime leaves that have been torn slightly so the aroma comes out.
  14. Add 2 stalks of bruised lemongrass.
  15. Pour in about 1 litre of water, then stir briefly so the spices mix through.
  16. Add 4 chicken thigh pieces, using both the upper and lower parts.
  17. Season with 2 tsp pepper, 3 1/2 tsp salt, and 2 tsp sugar, then stir briefly.
  18. Cover the pot, then cook until the meat is tender, about 30 minutes.
  19. While you wait, heat a wok, then add enough frying oil.
  20. Fry potatoes that have been cut into 4 pieces and seasoned with salt and pepper until cooked and lightly golden on the outside.
  21. Lift out the potatoes and drain them on kitchen paper to soak up the excess oil, then set them aside.
  22. Heat a wok with a little oil, then fry the emping crackers over medium heat, and drain off the excess oil.
  23. Once the chicken is tender, separate it from the broth because it will be fried.
  24. Add 800 ml of coconut milk from 1 mature coconut into the broth.
  25. Add about 400 ml of full cream milk so it is not all coconut milk.
  26. Stir slowly until the broth comes to a boil, then lower or turn off the heat.
  27. Fry the boiled chicken until the skin is crisp on the outside.
  28. To serve, cut up the fried potatoes and put them into a bowl.
  29. Add as much diced tomato as you like.
  30. Add the fried chicken, then ladle the soto broth over it.
  31. Top with sliced spring onion and fried shallots.
  32. Add emping crackers for a crunchy texture.
  33. Add cucumber and carrot pickles seasoned with calamansi, sugar, and salt, then squeeze over some kaffir lime and serve.
