  1. Cut about 500 g of chicken thigh into pieces.
  2. Squeeze in 1 lime, or swap it for 2 tbsp lemon juice.
  3. Add 1/2 tsp salt.
  4. Add 1/2 tsp ground white pepper.
  5. Add 2 tbsp cornstarch.
  6. Add 2 tsp light soy sauce.
  7. Slice 3 cloves of garlic, then add them to the chicken.
  8. Mix everything until well combined.
  9. Cover the bowl, then put it in the fridge for 1 hour or overnight.
  10. Slice half an onion if it is a large one.
  11. Finely chop 3 cloves of garlic.
  12. For the sauce, mix 1 tbsp regular light soy sauce and 3 tbsp sweet soy sauce.
  13. Add 2 1/2 tbsp Worcestershire sauce.
  14. Add 1 tsp thick salty soy sauce, which is optional since it only deepens the colour.
  15. Add 1/2 tbsp oyster sauce.
  16. Add 1/2 tbsp tomato sauce.
  17. Heat a generous amount of vegetable oil in a wok, then add the marinated chicken and cook until done.
  18. Once the garlic turns golden, lift it out and set it aside so it does not taste bitter.
  19. Keep frying the chicken until cooked, then lift it out of the pan.
  20. Heat a wok, then add 4 tbsp margarine or butter.
  21. Add the finely chopped garlic.
  22. Add the sliced onion, then saute briefly until fragrant.
  23. Add the sauce you made earlier, then stir briefly so it caramelises a little and smells better.
  24. Add 100 ml of water, then stir again.
  25. Thicken it with a mixture of 1 tsp cornstarch and 2 tbsp water, pour it into the sauce, and let it come back to a boil.
  26. Add 1/2 tsp mushroom stock powder, which is optional, 1 tsp sugar, and 1/2 tsp ground white pepper, then stir again.
  27. Add the fried chicken and garlic, then stir for just a few seconds so the sauce coats all the chicken.
  28. Turn off the heat and serve.
