Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Bring a pot of water to a boil, then add about 500 g of pork belly into the pot.
  2. Cook for about 15 minutes.
  3. Lift out the pork belly and let it cool slightly, then prick the whole skin with a fork, and do not leave it too long because dried skin is hard to prick.
  4. So the wok does not stick, heat it until it starts to smoke slightly.
  5. Pour vegetable oil into the wok, then pour the oil back out so the wok is seasoned and nothing will stick.
  6. Add enough room temperature oil for frying.
  7. Add the pork belly and fry for about 5 to 7 minutes until lightly golden, then turn off the heat.
  8. Put the pork belly into a bowl of cold water and leave it for about half an hour so the skin softens and is easier to slice.
  9. Prepare 8 shallots.
  10. Finely chop 8 cloves of garlic together with the shallots.
  11. Soak 1 tbsp of dried shrimp, then drain it.
  12. Soak 30 g of dried shiitake mushrooms, then drain them, remove the stems, and slice them.
  13. Cut and slice the pork belly that has been soaking.
  14. Prepare 200 g of dried preserved mustard greens, which taste very salty and usually still have grit in them.
  15. Wash the mustard greens several times under running water until they are properly clean and no longer gritty.
  16. Cut the mustard greens into small pieces or however you like.
  17. For the sauce, mix 2 tbsp oyster sauce, 4 tbsp sweet soy sauce, and 1 1/2 tbsp regular light soy sauce.
  18. Heat 3 tbsp vegetable oil, then add the chopped shallots and garlic and saute until fragrant.
  19. Add the dried shrimp.
  20. Add the sliced mushrooms.
  21. Add the pork belly.
  22. Add 2 tbsp Chinese cooking wine.
  23. Pour in the sauce you mixed earlier.
  24. Add the dried preserved mustard greens.
  25. Pour in about 2 litres of water.
  26. Add 1 tbsp thick salty soy sauce so the colour is a little darker, and swap it for regular light soy sauce if you do not have it.
  27. Add 1 tsp ground white pepper and 1 tsp mushroom stock powder.
  28. Cook for 50 minutes to 1 hour.
  29. Taste it and adjust the seasoning, then add 2 tsp sugar.
