  1. Slice the onion thinly.
  2. Mince the garlic.
  3. Cut the carrot into matchsticks.
  4. Cut the spring onion, keeping the white part for the stir fry and the green for garnish.
  5. Put 1 1/2 tbsp of oyster sauce in a bowl.
  6. Add 1 tsp of soy sauce.
  7. Add 1/2 tsp of rice vinegar.
  8. Add 1 tsp of brown sugar.
  9. Add 1 tsp of sesame oil and 1/8 tsp of black pepper.
  10. Add 1 tbsp of gochujang.
  11. Add 1 pinch of salt.
  12. Stir the sauce until combined and set it aside.
  13. Bring water to the boil, then turn off the heat.
  14. Soak the udon in the hot water for 40 seconds up to a maximum of 1 minute.
  15. Drain the udon.
  16. Toss the udon with a little oil so it does not stick.
  17. Heat a non-stick pan with a little oil.
  18. Saute the garlic until fragrant and lightly browned.
  19. Add the chicken pieces and cook until they change colour.
  20. Add the shimeji mushrooms.
  21. Add the onion.
  22. Add the carrot and the white part of the spring onion.
  23. Season the vegetables with salt and a little pepper.
  24. Cook over medium heat until the vegetables soften.
  25. Add the udon and raise the heat.
  26. Keep tossing so the surface of the udon fries evenly.
  27. Pour in the yaki sauce you made earlier.
  28. Toss and cook until the udon surface looks fried.
  29. Turn off the heat without cooking it any longer.
  30. Serve topped with the sliced green spring onion.
