Pandan Coconut Kaya Jam

  1. Slice the palm sugar and put it in a pot.
  2. Add sugar, coconut milk, salt, and bruised pandan leaves.
  3. Cook over low heat until the sugar dissolves and the mixture is warm.
  4. Whisk four egg yolks in a separate bowl.
  5. Pour half the warm coconut mixture into the yolks little by little while whisking.
  6. Pour the egg mixture back into the pot with the remaining coconut milk and stir.
  7. Cook over the lowest heat, whisking constantly, until the jam thickens and turns smooth.
  8. Take it off the heat and pour it into a container, stirring until the heat dissipates.
  9. Remove the pandan leaves and transfer the jam to a glass jar.
  10. Slice the bread and brush it thinly with butter.
  11. Toast the bread in a pan until both sides are nicely coloured.
  12. Spread the toast with kaya jam and butter, then serve.
