Milk Pudding with Brown Sugar Syrup

  1. Snip 3 sheets of gelatine and soak them in ice water.
  2. Soak the gelatine for 5 to 7 minutes until it blooms and softens.
  3. Put 400 g of milk in a saucepan.
  4. Add 100 g of unsweetened liquid whipping cream.
  5. Add 50 g of sugar.
  6. Add 1 tsp of vanilla extract and 2 pinches of salt.
  7. Heat while stirring so the sugar dissolves and nothing catches on the base.
  8. As soon as it boils, turn off the heat and take the pan off the stove.
  9. Squeeze out the bloomed gelatine and stir it into the hot milk.
  10. Stir until the gelatine has completely dissolved.
  11. Pour the pudding base into a jug and let the steam die down.
  12. Put 50 g of brown sugar in a small saucepan.
  13. Add 2 tbsp of water.
  14. Add 2 pinches of salt.
  15. Cook until it boils and the sugar dissolves, then take it off the heat.
  16. Set the syrup aside to cool; it will thicken as it cools.
  17. Pour the pudding into glasses over the back of a spoon so no bubbles form.
  18. Chill the puddings in the fridge until fully set.
  19. Spoon the brown sugar syrup over the chilled puddings.
  20. Finish with roasted soybean or ground peanut powder.
