Steps

  1. Beat the margarine, butter, and powdered sugar until fluffy
  2. Add the egg yolks one at a time while beating
  3. Add the dry ingredients and cheese, then mix well
  4. Weigh the dough, then divide it into 3 portions
  5. Cover the dough with cling wrap
  6. For the nastar, shape the dough into a rectangle and cut it into squares, make an indentation, fill with 1 tsp pineapple jam, close, and shape into a ball
  7. Continue until all the dough is used
  8. Bake at 120-130°C for 30 minutes, then remove from the oven and brush with the egg yolk and oil mixture
  9. Bake again at the same temperature for 20-30 minutes
  10. For the palm sugar cookies, add the cashews and grated cheese, shape the dough into a rectangle, then cut into squares
  11. Place them in a bowl of palm sugar and lightly press the dough with your fingers
  12. Bake at 120-130°C for 50-70 minutes
  13. For the cheese button cookies, add the cheese to the dough, then roll the dough on baking paper into a 3-mm-thick rectangle
  14. Cut the dough into 4 x 3 cm pieces, then bake at 120-130°C for 30 minutes
  15. Remove from the oven and let cool
  16. For the icing, beat the egg whites, lemon juice, and powdered sugar until slightly fluffy
  17. Transfer a little icing to a separate bowl, then add the coffee flavoring and chocolate paste and mix well
  18. Transfer the icing to piping bags
  19. Pipe the white icing over the cookies and spread it evenly
  20. Pipe the chocolate icing over it, then use a skewer to create a striped pattern
  21. Transfer the decorated cookies to a baking sheet lined with baking paper
  22. Bake again at 130°C for 30 minutes
