Savoury Smoked Beef and Cheese Muffins

  1. Cut the smoked beef into rough pieces.
  2. Cook the smoked beef in a non stick pan without oil until dry and lightly charred, then set it aside until it is no longer hot.
  3. In the same pan, grate in the garlic, add the unsalted butter and melt it over low heat until fragrant. Take it off the heat and let it cool completely.
  4. Preheat the oven to 190 to 200 C. The temperature needs to be high because this batter has very little sugar and browns reluctantly.
  5. Mix the flour, baking powder, baking soda, garlic powder, salt, bouillon powder and a little sugar until combined.
  6. Coarsely grate the cheddar into the dry ingredients and toss so the cheese is coated in flour and disperses evenly later.
  7. In another bowl, crack one large egg, then add the yoghurt, vegetable oil and liquid milk, and whisk until combined.
  8. Add the completely cooled garlic butter to the wet ingredients.
  9. Roughly chop the parsley and add it to the wet mixture.
  10. Add the cooled smoked beef to the dry ingredients and toss briefly.
  11. Pour the wet ingredients into the dry ingredients and mix gently just until it comes together. Do not overmix or the muffins will turn out tough.
  12. Spoon the batter into muffin cases, about 85 to 90 g each, roughly three quarters full.
  13. Tap the tin lightly so the batter levels, then sprinkle a little more parsley on top.
  14. Bake at 190 to 200 C for 25 to 30 minutes until cooked through and golden.
  15. As soon as they come out, brush the tops with butter so they stay moist and look glossy.
