Cheese and Smoked Beef Scones

Open offline saves

Ingredients

Steps

  1. Cut 5 to 6 slices of smoked beef into pieces, but not too small.
  2. Fry the smoked beef with a little oil until dry and fragrant, then lift out and set aside to cool.
  3. For the buttermilk, mix 120 ml cold milk with the juice of half a lime, stir, then leave for about 5 minutes until it splits.
  4. Preheat the oven to 180 degrees.
  5. Mix 350 g all-purpose flour with 30 g granulated sugar, 5 g salt and 8 g baking powder until thoroughly combined.
  6. Add 120 g cold unsalted butter, cutting and pressing it into the flour with a pastry cutter until the texture looks like sand.
  7. Add 150 g grated cheddar and the cooled smoked beef, then mix until evenly distributed.
  8. Lightly beat 1 egg, then combine it with the buttermilk.
  9. Pour the wet mixture into the dry ingredients and stir just until it comes together as a dough, without overworking it.
  10. Dust the work surface with flour, tip the dough out, then bring any loose flour together by hand.
  11. Dust a little flour on top, then roll the dough out to the thickness you prefer.
  12. Cut out the scones with a ring cutter dusted in flour so it does not stick.
  13. Gather the scraps, roll them out again, then keep cutting until the dough is used up.
  14. Arrange the scones on a tray and brush the tops with egg yolk.
  15. Sprinkle the tops with grated cheese and the remaining smoked beef.
  16. Bake in the preheated oven for about 20 to 25 minutes until the tops are golden brown.
