Steamed Egg with Minced Meat Sauce

  1. Finely chop the garlic.
  2. Thinly slice the spring onion, keeping the white part for stir frying and the green part for garnish.
  3. Slice the chilies to the level of heat you like.
  4. Weigh the eggs without their shells, then work out the water by multiplying the egg weight by 1.5. For 200 g of egg that means 300 ml of water.
  5. Warm the water and dissolve the bouillon powder in it.
  6. Beat the eggs just until the yolks and whites are combined, without creating a lot of foam.
  7. Pour the stock into the eggs and stir until evenly mixed.
  8. Strain the egg mixture to remove any residue so the result is silky.
  9. Skim off any foam on the surface or torch it briefly so the top is perfectly smooth.
  10. Cover the dish so no condensation drips in, then steam over low heat for 10 minutes.
  11. Take the steamed egg out right at 10 minutes. Do not steam it longer or the texture will puff up and lose its smoothness.
  12. Heat a little oil and stir fry the garlic and the white part of the spring onion until fragrant.
  13. Add the chilies, then the minced meat, and cook until the meat changes colour.
  14. Pour in enough water to make a sauce.
  15. Add the oyster sauce, dark soy sauce, about 1 tsp sugar and the salt, then stir until combined.
  16. Let it boil for about a minute so the flavours develop.
  17. Stir in the cornstarch and water slurry until the sauce thickens.
  18. Finish with a little sesame oil.
  19. Pour the meat sauce over the steamed egg, sprinkle with the green spring onion, and serve with hot rice.
