Steps

  1. For the dough, prepare the yeast mixture by combining the yeast and sugar with the warm water. Stir and let sit briefly.
  2. In a bowl, combine the flour and salt. Mix well. Make a well in the center, then add the yeast mixture, egg, coconut milk, and melted margarine. Mix until combined.
  3. Knead the dough until smooth and no longer sticky. Shape into a ball, cover with plastic wrap, and let rest for 30 minutes or until doubled in size.
  4. For the filling, place the shallot, garlic, ginger, turmeric, red Thai chili, large red chili, and water into a blender. Blend until smooth.
  5. Heat the oil for sautéing and add the spice paste. Bruise the lemongrass and add it along with the bay leaf, pandan leaf, and kaffir lime leaf. Sauté over medium-low heat until fragrant and the oil separates.
  6. Add the shredded skipjack tuna, salt, sugar, and MSG. Stir well and cook over low heat until dry. Turn off the heat and let cool.
  7. Deflate the risen dough and divide it into 12 portions weighing 40-42 g each. Shape into balls and let rest again for 5-10 minutes.
  8. Flatten each dough portion and fill with about 20 g of tongkol rica filling. Fold and seal the dough, then crimp the edges tightly. Let the shaped Panada rest for 10-15 minutes before frying.
  9. Fry the Panada in hot oil over medium-low heat for 1.5 minutes per side or until golden brown and cooked through.
  10. Panada Tongkol Rica is ready to serve.
