Ingredients

Steps

  1. Heat oil and fry 200 g of salted tuna with the lid on so the oil does not spit, frying until browned, then lift out and drain.
  2. Grind 5 shallots, 3 garlic cloves and 100 g of red chillies with a little oil.
  3. Fry the spice paste over low heat together with 2 bay leaves until cooked through.
  4. Add a little water, half a teaspoon of salt, half a teaspoon of chicken stock powder, 2 teaspoons of sugar and a quarter teaspoon of ground pepper, then stir to combine.
  5. Add the tuna and cook over low heat until the seasoning soaks in and the liquid reduces, then take it off the heat.
  6. For the stir-fried water spinach, thinly slice 2 shallots, 1 garlic clove and half a tomato.
  7. Fry the shallots and garlic until fragrant and softened, then add a little water.
  8. Add 1 tablespoon of oyster sauce, a quarter teaspoon of salt, a quarter teaspoon of chicken stock powder and half a teaspoon of sugar, then stir to combine.
  9. Add one bunch of water spinach that has been cut and washed, and cook only briefly so it does not turn black.
  10. Add the tomato, stir until wilted, then take it off the heat and serve.
  11. For the tofu and egg martabak, slice 5 spring onions, then mash 5 pieces of tofu with a fork.
  12. Add 1 egg, salt, chicken stock powder, sugar and ground pepper, stir to combine, then mix in the spring onion.
  13. Take a spring roll wrapper, fill it with a spoonful of the tofu mixture, fold it up, then seal the edge with flour mixed with a little water.
  14. Fry the tofu martabak, turning them over, until browned, then lift out and drain.
