  1. Scald the kwetiau (flat rice noodles) briefly in hot water (about 1 minute) until soft, then drain and rinse with cold water so they don't stick together or turn mushy.
  2. Grind the onion and shallots with a little oil.
  3. Peel the cooked salted eggs and use only the yolks.
  4. Saute the ground paste until fragrant, add the salted egg yolks, mash them in, add curry leaves, cook until fragrant, then pour in the evaporated milk until creamy.
  5. Season the sauce with salt and sugar to taste, adjust as needed.
  6. Cut the shallots, bird's-eye chilies, sausage, and shrimp for the filling.
  7. Heat a little oil, saute the shallots and bird's-eye chilies until fragrant, add the sausage and shrimp, cook until done.
  8. Add a little soy sauce, stir well, then add the scalded kwetiau and curry leaves, stir well.
  9. Pour the salted egg sauce over the stir-fried noodles, toss until well combined and absorbed.
  10. Remove and serve the salted egg kwetiau while warm.
