  6. Heat sesame oil in the same pot, saute garlic and scallions until fragrant.
  7. Add the fish balls and beef, cook until the meat changes color, then add the vegetable stems first, followed by the leaves.
  8. Pour in the remaining sauce, stir well, adjust the seasoning.
  9. Beat 2 eggs, pour into the simmering broth while stirring so it doesn't turn too cloudy.
  10. Add the tapioca/sago starch slurry a little at a time while stirring until the broth reaches your desired thickness.
  11. Pour the thickened broth with its toppings over the sauteed kwetiau, garnish with the remaining scallions, and serve.
