Steps

Steps were generated from the video narration. Watch the video if unsure.

  1. Marinate the steak with soy sauce, Worcestershire sauce, olive oil, salt, and black pepper.
  2. Add mustard and Guinness beer to the marinade, mix well, then add minced garlic, mix until fully coated.
  3. Cover and refrigerate the steak to marinate for about 30-40 minutes.
  4. Boil the penne in salted boiling water (no oil) for a few minutes less than the package instructions, so it finishes cooking later with the sauce.
  5. Mince the garlic and grate the ginger, finely slice the bird's-eye chilies for heat.
  6. Drain the pasta (reserve a little pasta water), heat a mix of olive oil and regular oil in a pan, saute the garlic and ginger until fragrant.
  7. Add the smoked beef and chili flakes, cook briefly, then deglaze with a splash of Guinness beer, cook until the alcohol evaporates.
  8. Add the shimeji mushrooms, cook briefly, then add the pasta along with a little pasta water, oyster sauce, chicken powder, a little sugar, and soy sauce, stir well.
  9. Set the pasta aside, ready to finish together with the steak.
  10. Pat the steak dry with paper towels, heat a pan until very hot and smoking, render the fat side first, then sear the steak a few minutes per side until deeply browned (darker from the beer marinade).
  11. Remove the steak and let it rest while finishing the pasta.
  12. Reheat the pasta briefly, adjust seasoning, plate the sliced steak alongside the spicy mushroom pasta, and serve.
