  1. Prepare and roughly chop fresh herbs: rosemary, thyme, marjoram, and parsley.
  2. Sauté the chopped onion in oil, adding it while the oil is still cold, and cook over low heat until wilted.
  3. Add the butter while it's still cold, together with the onion, so it doesn't burn too quickly.
  4. Add the minced garlic and a little salt, cook until fragrant, then remove from heat and let cool.
  5. Whip the room-temperature butter until pale and increased in volume.
  6. Mix the herbs and the cooled onion-garlic mixture into the whipped butter.
  7. Season with salt and black pepper, then add shrimp paste sambal to taste for a variation (optional).
  8. Chill the compound butter briefly to firm up.
  9. Toast the baguette with a little butter in a hot pan until crisp.
  10. Take the steak out of the fridge to come to room temperature, pat the surface dry, then season with salt.
  11. Heat a pan until very hot, sear the steak about 2-3 minutes per side without flipping too often.
  12. Assemble the sandwich with the bread, onion rings, seasoned tomato slices, sliced steak, and place the compound butter on top of the hot steak to melt before serving.
