  1. Blend the base spice paste: chilies (for color), shallots, turmeric, ginger, and the white part of a scallion, with a little oil and water, until smooth.
  2. Heat oil in a pressure cooker pot, sauté the spice paste until fragrant.
  3. Add the aromatics: scallion, kaffir lime leaves, bay leaves, lemongrass, and galangal.
  4. Season with salt, bouillon powder, ground coriander, MSG, palm sugar, beef bouillon cubes, and tamarind, cook over medium heat until fragrant and the raw smell is gone.
  5. While the seasoning cooks, cut the beef shank into pieces.
  6. Add the beef into the seasoning, cook briefly before adding water.
  7. Pour in about 2 liters of water, close the pressure cooker lid, and cook for 40 minutes to 1 hour until the beef is tender.
  8. For the sambal, blend the chilies with a little salt, sugar, water, and vinegar, then simmer for about 2 minutes so it keeps longer.
  9. Once the beef is tender, open the pressure cooker and add coconut milk, stirring until it melds with the beef and broth.
  10. Serve the gultik with the sambal, fried shallots, onion crackers, and a squeeze of lime.
