  1. First boil the beef until tender. In a pressure cooker this takes about 30 minutes; in an ordinary pot it will take longer.
  2. Before opening the pressure cooker, turn off the heat and release all the steam first, then open the lid. Lift the beef out and drain.
  3. Slice the beef along the grain so it will not fall apart when you pound it.
  4. Pound the beef until slightly flattened, but not so hard that it breaks apart.
  5. Grate about 100 g galangal. Line the grater with plastic so the galangal does not clog the holes.
  6. Grind the shallots, garlic, candlenuts, ginger, dry-roasted coriander, pepper and nutmeg with a little water.
  7. Put the spice paste and grated galangal into a wok and add about 150 ml water.
  8. Add the beef, bay leaves, lemongrass, salt, beef stock powder, granulated sugar, palm sugar, tamarind and instant coconut milk. Turn the heat to low and stir until the seasoning is evenly combined.
  9. Cook over low heat until the seasoning soaks in and the liquid has fully reduced, stirring gently now and then so the meat does not break up, then turn off the heat.
  10. Fry the beef over low heat and not for too long; do not let it get too dry or the meat will turn tough, and the colour will darken on its own anyway. Lift out and drain.
